Bread filled with egg

Preheat the oven to 160°C. Cut a "lid" off the top of a bread roll and hollow out the inside. Fill the cavity with your choice of anchovies or smoked salmon pieces, ham, cheese, or sautéed onions. Crack an egg on top, keeping the yolk intact. Place the filled rolls on a baking sheet and bake until the egg white is fully set, but the yolk remains soft. Season with herbs and serve.

Asparagus and poached eggs

Boil water in a pot and add vinegar and salt. Reduce the heat to a simmer. Crack the eggs into small cups. Stir the water with a spoon to create a whirlpool, then slowly pour the egg into the center of the whirlpool. Cook one egg at a time for 3-4 minutes, depending on your preference.

Trim the tough ends of the asparagus. Boil the asparagus for about 5 minutes. Arrange the asparagus and poached eggs on a plate. Sprinkle with black pepper. You can modify the dish by adding prosciutto or parmesan.

Juicy stuffed omelette for two

– 3 eggs

– 3 tbsp milk
– a pinch of salt and ground white pepper
– 1 tbsp butter
Stuff with ham, tomato and rocket, for example.

Mix the eggs and milk together so that the eggs break slightly. Season the mixture and pour into a hot frying pan. Using a wooden spatula, pull the mixture along the bottom from the edges to the centre until it solidifies slightly. Add filling in the middle and fold the omelette on a plate. Serve straight away.

– 2 eggs
– 5 dl milk or lactose-free milk
– 2½ dl coarse wheat flour
– ½ tsp salt
– Butter or oil for frying

 

Mix a few decilitres of liquid together with the flour and salt. Add the eggs and the rest of the liquid. Mix until smooth. Let the dough rise for 30 min. Fry in a frying pan. The dough is enough to make 6-8 pancakes. Fill to taste and wrap into a roll. Have the pancakes for supper, for example.

Dye Easter eggs with natural dyes.

You can get natural dyes from ingredients like frozen blueberries, green tea, beetroot, and various spices such as paprika powder and turmeric. For the best result, use white eggs.

Add the coloring ingredient to boiling water before the eggs, and simmer the dye mixture, stirring, until you achieve the desired color. Also, add a tablespoon of vinegar to help the color bind to the eggshell. Boil the eggs for 7-10 minutes, depending on how cooked and how vibrant you want the eggs to be.

How to marble eggs from the Inside

Remove the eggs, boiled for 7-8 minutes, from the pot one at a time and place them on a plate. Tap the shell of each egg firmly with the rounded side of a spoon to crack it. Then, return the egg, with the shell still on, to the hot dye water. Once all the eggs are in the liquid, let them steep under a lid without heating for five minutes. A natural dye, such as the tea used in the example, seeps through the cracks in the shell to create a marbled effect on the eggs. At the same time, the eggs finish cooking.

NOTE! This technique cannot be used with synthetic dyes if you want the eggs to remain edible.

Cucumber Christmas trees made easy

Boil the eggs for 8 minutes. Cool and peel them. Use a knife or a cheese slicer to cut long cucumber ribbons and pat them dry with a paper towel. Thread the cucumber ribbons onto a toothpick in the shape of a Christmas tree.

Halve the eggs and remove the yolks. Mash the yolks with mayonnaise, mustard, Tabasco, salt, and pepper until smooth. Transfer the filling into a piping bag. Arrange the egg halves on a serving platter. Pipe the filling into the hollows. Attach the cucumber trees on top using toothpicks.

Orange egg custard – served cold

– 8 egg yolks
– 6 dl milk or lactose-free milk
– 1 dl orange juice
– 1 dl fine sugar
– 4 pinches of salt
– ice cubes
– ground cinnamon
Whisk the egg yolks and sugar into a fluffy foam. Add the juice and salt, then whisk in the milk drink. Finally, add ice cubes to glasses and pour the eggnog mixture on top. Sprinkle a pinch of ground cinnamon as a garnish.

Eggs with three different fillings

Peel and halve the hard-boiled eggs. Remove the yolks. Pipe the cavities with either a mixture of finely chopped yolks and tuna paste or roe paste, and garnish with a delightful dollop of roe. Alternatively, place a slice of cold-smoked ham on top and decorate with a piece of apple. You can also fill the eggs with lemon mayonnaise and top them with shrimp and dill.

- 3 dl of cooked rice
- 3 boiled eggs
- 1 small onion
– a pinch of salt and pepper mix
- a piece of Brie cheese
Sauté the finely chopped onion in butter. Mix the cooked rice, chopped eggs, onion, and spices into a smooth mixture. Roll out the thawed pastry sheets thinner and cut each sheet into 3 pieces. Place a dollop of filling and a small piece of Brie cheese in the center, then fold into a triangle. Press the edges firmly to seal. Brush with egg wash and bake in the oven at 225°C (435°F) on the middle rack for 10–15 minutes, until cooked and beautifully golden.
